Mùa rau sắng…món rau đặc sản

 Sau Tết, những cơn mưa xuân lất phất bay, ấy là khi những cây rau sắng mơn mởn vươn lên đón lấy khí xuân, bật ra lộc biếc. Quãng độ sang tháng hai âm lịch, khi xuân đang độ chín, người dân bắt đầu thu hái những lá non, đọt mầm hoặc chùm hoa từ cây rau sắng.

Chiều nay có người bạn ở Phủ Lý gửi biếu vài mớ rau sắng. Thật là đáng quý bởi “của một đồng, công một nén”, bạn chẳng quản ngại đường xa mang về Hà Nội làm quà. Vừa tỉ mẩn nhặt rau, tôi vừa chợt nhớ bao câu chuyện xa gần về loại rau đặc biệt này.

Rau sắng có nhiều tên gọi khác nhau như: Rau ngót rừng, cây mì chính, tắc sáng, pắc van… nhưng ở vùng miền nào cũng đều nhắc tới vị ngọt tự nhiên của loại rau này. Trong văn hóa ẩm thực của người Việt, rau thường là những cây thân bụi, thấp. Riêng rau sắng lại là dạng cây thân mộc, mọc ở các vách đá của núi đá vôi. Thân cây to cao, đường kính thân có thể tới 20 – 30cm. Vậy nên, người ta thường phải trèo lên cây để hái rau. Cuối mùa đông, cây sắng rụng hết lá già, đầu xuân, cây bỗng cựa mình bật ra những lá xanh non mềm mại.

Với cây rau sắng, các bà các mẹ có thể chế biến thành nhiều món ngon khác nhau. Phần lá non, đọt thân thường được nấu với tôm nõn, thịt vai xay, sườn, hến, cá rô, cá quả… mỗi món ăn cho ta một hương vị khác nhau. Chùm rồng rồng được các bà các mẹ xào với thịt bò, đập thêm vài nhánh tỏi, rắc xíu hạt tiêu là có thể ăn với cơm nóng được rồi. Thịt bò thơm mềm quyện cùng rồng rồng ròn ngọt, thật là đưa cơm lắm. Quả sắng khi chín ăn ngọt như mật ong. Người ta thường tách vỏ để lấy hạt, ninh với xương cũng trở thành món canh ngon và bổ dưỡng.

Có điều khá thú vị, một số người có thói quen “nấu suông” canh rau sắng và không bao giờ cho mì chính. Người sành ăn cho rằng, chỉ khi ta ăn rau sắng nấu suông, thì mới có thể cảm nhận được hết vị ngọt thanh mát của loại rau này. Dường như, bao tinh túy của đất trời, sương sớm đọng cả vào bát canh. Đặc biệt, rau sắng nấu với cá tràu còn là một món ăn “tiến vua” từ xa xưa. Món canh nấu tuy đơn giản nhưng vị ngọt của rau thật hợp vị với thịt thơm, dai chắc của loài cá này.

Theo dân gian, rau sắng hái ở chùa Hương và Kim Bảng, Hà Nam thường có hương vị đặc biệt, thơm ngọt đậm đà hơn các nơi khác. Dường như, với nhiều người, được vãn cảnh chùa Hương và mua vài mớ rau sắng đầu mùa là một thói quen tao nhã. Thi sĩ Tản Đà cũng là người như vậy, trong một lần không đi được lễ hội chùa Hương, ông đã cho đăng bài “Rau sắng chùa Hương” trên báo. Những vần thơ của ông nhanh chóng nổi tiếng và được nhiều người biết đến: “Muốn ăn rau sắng chùa Hương/ Tiền đò ngại tốn con đường ngại xa/ Mình đi ta ở lại nhà/ Cái dưa thì khú cái cà thì thâm”. Một nữ độc giả từ Phủ Lý đã gửi tặng thi sĩ Tản Đà rau sắng cùng bài thơ họa lại rất thú vị: Kính dâng rau sắng chùa Hương/ Tiền đò đỡ tốn con đường đỡ xa/ Không đi thời gửi lại nhà/ Thay cho dưa khú cùng là cà thâm”. Câu chuyện đã trở thành một giai thoại nổi tiếng thời đó.

Mùa rau sắng lại tới, ta chẳng nên bỏ lỡ hương vị đặc biệt của những món ăn được chế biến từ loại rau đặc biệt như vậy.
